How to delete a category?

This depends a bit on your setup! If you're using one of our accounting integrations (like QBO, NetSuite, Sage Intacct, or Xero), then this is controlled via the integration, but you can disable categories from view/selection via Settings > Policies > Group > [Policy name] > Categories. From there, click the toggle on the left to either enable or disable a value.
On the other hand, if you're not connected to an accounting integration, you should be able to go to Settings > Policies > Group > [Policy name] > Categories, then click the red x to remove a given category. If you're not using a Group Policy, then you can do this via Settings > Policies > Individual > [Policy name] > Categories.
