Can we set a tag/category field up so that any new option on the field that new values aren't shown?

We have a tag or category field that receives new values from an integration we have with Financial Force. Anytime a new option is added to the mapped field in FinancialForce, Expensify will also add that new option to all of our policies. Many of these policies do not need this field and we would like to be able to stop the values from being added automictically or hide particular fields from specific policies.
